This article analyses the way in which visits by people from outside modify the ordinary organisation of work in an industrialised slaughterhouse. One can observe that workers and their managers were seen to cooperate in presenting their work in a variety of ways, depending on the importance they attributed to the visitors. The traditional opposition between recommendations and actual operations does not account for these situations because, in this instance, the way work was presented was as varied as the people who came to check on the application of standards. More broadly, the article contributes to a methodological reflection on the kind of information that is acquired by observers in this type of visit situation.
